🔥 With a Grill

Got a camp grill or grill grate over the fire? These meals come together fast and taste like you actually tried.

Grilled Foil Packet Chicken & Veggies

Ingredients: Chicken thighs, bell peppers, zucchini, olive oil, garlic, Italian seasoning.

How to make it: Toss everything together with olive oil, minced garlic, and Italian seasoning. Lay out a large sheet of foil, pile on the chicken and veggies, then fold the foil into a sealed packet. Place on the grill over medium heat for about 20 minutes, flipping once halfway through. Open carefully — that steam is no joke! Dinner is served, and cleanup is just tossing the foil.

BBQ Quesadillas on the Grill

Ingredients: Large flour tortillas, shredded chicken or beef, shredded cheddar cheese, BBQ sauce, jalapeño slices.

How to make it: Lay a tortilla flat and layer on your cheese, meat, a drizzle of BBQ sauce, and jalapeños. Fold in half and place directly on a medium grill. Grill about 3 minutes per side until the cheese is melted and you’ve got those gorgeous grill marks. Slice into wedges and try not to eat the whole thing in one sitting. (No judgment if you do.)

Grilled Hot Dogs with Campfire Toppings

Ingredients: Hot dogs, buns, caramelized onions, relish, mustard, chili (canned works great!).

How to make it: Grill your hot dogs over medium-high heat for 5–7 minutes, turning frequently until you get those beautiful char lines. While they cook, warm your chili in a small pot and caramelize some onions in a pan if you’re feeling fancy. Pile on the toppings and hand one to every person around the fire — instant smiles guaranteed.

Grilled Corn with Chili Butter

Ingredients: Corn on the cob (in the husk), butter, chili powder, fresh lime, salt.

How to make it: Soak the corn (still in the husk) in water for about 10 minutes — this keeps it from scorching. Place directly on the grill over medium heat for 15 minutes, turning every few minutes. While it grills, mix softened butter with chili powder and a pinch of salt. Peel back the husks, slather on the chili butter, squeeze lime over the top, and take a big bite. Summer at the campsite, baby!

Burger Sliders with Secret Sauce

Ingredients: Ground beef, slider buns, American cheese, lettuce, and the Secret Sauce: mayo + ketchup + pickle relish + garlic powder.

How to make it: Form the ground beef into small, slightly thin patties — they’ll shrink up when they cook. Grill over high heat for about 4 minutes per side. In the last minute, lay on a slice of American cheese and let it melt like a dream. Mix up your secret sauce (mayo, ketchup, pickle relish, garlic powder — taste as you go!), slather it on the buns, add lettuce and the patty. These sliders disappear fast, so make extra.

Grilled Pineapple Teriyaki Skewers

Ingredients: Chicken breast (cubed), pineapple chunks, red onion (cut into chunks), teriyaki sauce, skewers (soak wooden ones in water first!).

How to make it: Toss chicken, pineapple, and red onion in teriyaki sauce and let everything marinate for at least 30 minutes — longer if you prepped at home. Thread onto skewers in whatever pattern makes you happy. Grill over medium heat for 10–12 minutes, turning every few minutes and brushing on extra teriyaki sauce as you go. The pineapple caramelizes, the chicken gets juicy, and everyone thinks you’re a genius.

Campfire Grilled Fish Tacos

Ingredients: White fish fillets (tilapia, mahi-mahi, or cod), corn tortillas, shredded cabbage slaw, lime crema (sour cream + lime juice + garlic), hot sauce.

How to make it: Season your fish with salt, pepper, and a little cumin. Grill over medium-high heat about 4 minutes per side — the fish is done when it flakes easily with a fork. Warm the corn tortillas on the grill edge for 30 seconds per side. Build your tacos: fish, cabbage slaw, a drizzle of lime crema, and hot sauce to taste. Eat them by the fire and feel like you’re on vacation. (Because you are.)

🏕️ Without a Grill

No grill? No problem. A camp stove, a pan, or even just boiling water is all you need for these no-fuss favorites.

Cheesy Camp Ramen Upgrade

Ingredients: Instant ramen noodles (ditch half the sodium packet), egg, shredded rotisserie chicken, soy sauce, sesame oil, sliced green onions, one slice of American cheese.

How to make it: Cook your ramen according to package directions. In the last minute, crack an egg directly into the pot and stir gently — it’ll cook in the hot broth. Add the shredded chicken, a splash of soy sauce, a drizzle of sesame oil, and lay the cheese slice on top. Let it melt for 30 seconds, then top with green onions. Your standard campsite ramen just got a serious promotion.

One-Pan Chicken & Rice

Ingredients: Chicken thighs (boneless), instant rice, chicken broth, garlic powder, onion powder, paprika, salt & pepper.

How to make it: Season the chicken with garlic powder, onion powder, paprika, salt, and pepper. Brown it in a large pan or camp skillet over medium-high heat for about 5 minutes per side. Add your chicken broth, bring to a simmer, then stir in the instant rice. Cover and let it steam for 5 minutes. Fluff with a fork and you’ve got a legit, hearty meal in about 20 minutes — one pan, zero stress.

Campfire Mac & Cheese from Scratch

Ingredients: Elbow pasta, butter, shelf-stable milk (or powdered milk + water), shredded cheddar cheese, salt, pepper.

How to make it: Boil your elbow pasta in salted water until just tender, then drain most of the water — leave a tiny splash in the pot. Add butter, milk, and shredded cheddar directly in the same pot. Stir over low heat until everything melts into a creamy, dreamy sauce. Season with salt and pepper. That’s it. Kids lose their minds over this one every single time — and honestly, so do the adults.

Egg & Sausage Breakfast Scramble

Ingredients: Eggs, breakfast sausage (links or patties, crumbled), diced bell pepper, diced onion, shredded cheese, hot sauce.

How to make it: Cook the crumbled sausage in a skillet over medium heat until browned, about 5 minutes. Add the diced pepper and onion and cook another 2–3 minutes until softened. Pour in your beaten eggs and scramble everything together. Once the eggs are just set (not rubbery!), pull off the heat and top with shredded cheese and a few dashes of hot sauce. Ready in about 10 minutes and fuels the whole crew for a big adventure day.

Pesto Pasta with Sun-Dried Tomatoes

Ingredients: Pasta (any short shape), jarred pesto, sun-dried tomatoes (oil-packed jar), shredded or grated parmesan, olive oil, salt.

How to make it: Boil pasta in salted water until al dente, then drain. Toss immediately with a generous spoonful of pesto, some of the oil from the sun-dried tomato jar (liquid gold!), the sun-dried tomatoes, and a handful of parmesan. The pasta heat does all the work. Drizzle a little extra olive oil over the top and serve. Fancy enough to impress, easy enough to make with one pot and zero prep board.

Instant Mashed Potato Bowl with Toppings

Ingredients: Instant mashed potato flakes, boiling water, butter, shredded cheddar cheese, bacon bits, sour cream packet, fresh or dried chives.

How to make it: Boil your water (camp stove or fire), measure out the potato flakes according to the package, and stir in the butter. That’s your base — ready in about 5 minutes. Now go wild with toppings: pile on the shredded cheese (it’ll melt right in), bacon bits, a dollop of sour cream, and a sprinkle of chives. Eat it straight from the pot if you want. We won’t tell.

Tortilla Soup in a Pot

Ingredients: Canned black beans, canned corn, canned diced tomatoes, chicken broth, taco seasoning packet, shredded rotisserie chicken, tortilla chips, sour cream.

How to make it: Open your cans, dump everything into one pot — beans, corn, tomatoes, broth, taco seasoning, and chicken. Stir it all together and bring to a simmer over medium heat. Let it bubble away for about 15 minutes so all the flavors get to know each other. Ladle into bowls or camp cups, crush some tortilla chips on top, and add a spoonful of sour cream. Warm, hearty, and ready before anyone gets too hungry to be fun.
