🍝 Skillet Lasagna

Ingredients: Italian sausage, crushed tomatoes, lasagna noodles (broken into pieces), ricotta, shredded mozzarella, Italian seasoning, garlic.

How to make it: Brown the sausage in a large skillet, breaking it up as it cooks. Add the crushed tomatoes, garlic, and Italian seasoning, then toss in the broken lasagna noodles with enough water to cover. Simmer for 12–15 minutes, stirring occasionally, until the noodles are tender. Dollop ricotta over the top, sprinkle on the mozzarella, cover for a minute to melt, and dig in. One pan. No oven. Yes, really.

🌮 Skillet Enchiladas

Ingredients: Ground beef or shredded chicken, canned enchilada sauce, corn tortillas (cut into strips), shredded cheddar, black beans, diced onion, cumin.

How to make it: Brown your meat with onion and cumin until cooked through. Add the enchilada sauce and black beans, stir everything together, then toss in the tortilla strips. Simmer for about 8 minutes until the tortillas soften and soak up all that sauce. Top generously with shredded cheddar, cover for a minute to melt, and serve straight from the pan.

🍋 One-Pan Lemon Chicken Orzo

Ingredients: Boneless chicken thighs, orzo pasta, chicken broth, lemon juice and zest, garlic, fresh or baby spinach, parmesan.

How to make it: Season chicken and sear it in the skillet for about 5 minutes per side until golden. Remove and set aside. Sauté garlic for a minute, then add the orzo and chicken broth and bring to a simmer. Nestle the chicken back in, cover, and cook for about 12 minutes until the orzo is tender and the chicken is cooked through. Stir in spinach until wilted, squeeze lemon over the top, and hit it with parmesan.

🥚 Cowboy Breakfast Skillet

Ingredients: Bacon, diced potatoes, eggs, bell pepper, onion, shredded cheddar, hot sauce.

How to make it: Cook the bacon in a cast-iron skillet until crispy. Remove and crumble — but leave those drippings right where they are. Add the diced potatoes and cook for about 10 minutes, stirring occasionally until golden. Add the bell pepper and onion and cook another 5 minutes. Make little wells in the mixture, crack an egg into each one, and cover the skillet. Cook until the eggs are just set. Top with shredded cheddar, crumbled bacon, and as much hot sauce as your morning can handle.

🍗 Creamy Tuscan Chicken Skillet

Ingredients: Chicken breasts, sun-dried tomatoes (oil-packed), garlic, heavy cream or shelf-stable cooking cream, spinach, parmesan, Italian seasoning, salt and pepper.

How to make it: Sear the chicken breasts for about 5 minutes per side until golden. Remove from the pan. In the same pan, sauté the garlic and sun-dried tomatoes for a minute, then pour in the cream and stir in the parmesan. Add spinach and let it wilt. Return the chicken to the pan and simmer for 5 minutes until it’s cooked through and coated in that gorgeous creamy sauce.
